I would love to be able to select part of the text in the note, right-click and select "strike-through" to cross out for example, the tasks complete.

yes, and some features like bold and italic or just changing the Font. It is actually fine, but sometimes I need a courier-like font for my notes (e.g. for some code segments)

When you have a list of things in a note and you want to strike out the ones you already took care of (but keep them there if you need a reminder).
