Well, I e-mail this request a while back, but never got a response. Anyway, I really want to be able to toggle the visibility of all notes by clicking / double clicking on the systray icon.

Shift-click on the icon. It's been in there from day one, as far as I can remember.
It's in the 'Tips' section of the 'How to Use' instructions, which are shown when you first install Memento, and which are on the web page for Memento on this site.

Ugh. Guess that'll teach me to RTFM. Still, customizable would be nice. Meanwhile, I guess I've finally figured out what the 7th button of my mouse should do...
